So I happened to get a Sodastream over the winter, and have been using it pretty much daily since, and can honestly say it is a great piece of technology and one I would be sad to be without. This is the perfect way to replace cans or bottles of soda, assuming you don’t mind a bit of different flavor.

The first thing you learn though, is don’t use the crappy samples that come with the machine. Personally I enjoy drinking soda water straight from the bottle, so I do that frequently, but you can also make your own syrups and sparkling beverages.

Ian’s Kitchen Corner:

Winter Chili with Cornbread

Chili:

1 Can of Pinto Beans
1 Can of Kidney Beans
1 Can of Black Beans
3 Cans of Tomatoes (I use smoked tomatoes with adobo)
Olive oil
2 onions
5 cloves garlic
1 zucchini
1 yellow squash
2/3 can of corn
*optional: Gimme Lean Sausage
1 large potato
1/2 cup brown rice
1 cup water
Cumin
Salt
Pepper
Cayenne Pepper
Chipotle Powder

Recipe works best in a slow cooker, but can be prepared on a stove, just be mindful of it.

In a pot, combine beans and tomatoes and put on medium heat. Prepare rice in a steamer or on stove top

Slice onion and dice garlic. Add a tbsp of oil to a cast iron pan, add onion and cook until soft. Add garlic and cook a few additional minutes. If you are using a fake meat, add it now. Slice zucchini and squash and potato, add to pan. Cook until zucchini and squash are tender. Add to the large pot, also add 2/3 corn and the rice once it is finished cooking. season with salt pepper cumin, cayenne and chipotle peppers to taste.

Corn Bread:

2 cups cornmeal
2 cups whole wheat flour
2 teaspoons baking powder
1/3 cup canola oil
2 tablespoons agave nectar
2 cups coconut milk
2 teaspoons apple cider vinegar
1/2 teaspoon salt
1/3 can of corn

Preheat your oven to 350. Grease a pan with oil or shortening. Mix dry ingredients. Mix vinegar and coconut milk (this is to create an acidic fatty liquid, similar to buttermilk), then whisk in agave and oil until the mixture is frothy. Add liquid to the dry ingredients, and mix until smooth. Pour into pan and bake in oven 35 minutes. It is ready when a toothpick inserted comes out clean.

We got into some politics talk to start with. Tuesday was vexing, hopefully we can get a compromise energy independence bill through congress, we cannot let the last decade of renewable energy growth go to waste! Time to put a pin in global warming and built the economy of the future!

I haven’t worked with WordPress in awhile, but I’m getting my sea-legs back. I haven’t quite decided on a design theme yet. I’m torn between the idea of having my site replicate a newspaper or having more of a stylized design. I don’t want to be too anachronistic, but I really enjoy the conventions of a newpaper, the serif text, the black and white minimalism, the blocky text segments. Indeed, if I find the right theme, this might work for me, but otherwise I fear I’m a bit too lazy to do this myself. While I can handle design on paper, coding a custom WordPress theme may be a bit more than I’m willing to take on my plate at the moment. For now, things will change a lot, possibly back and forth, until I decide on one look.
